Norman's Prize-Winning Marinade

this makes cheap meat taste like prime rib roast. It makes a great hot meal and bonus sandwiches for DAYS after...


1 tsp sea salt
1 tbsp powder ginger
1 tsp hot pepper flakes
1 tsp fresh ground black pepper
3 tbsp dry mustard
1 tbsp Dijon whole grain mustard
2-3 tbsp hot dog mustard
1 tsp garlic
small pinch cinnamon
1/2 pinch nutmeg
1/2 tsp anise seeds
1 tsp dried basil (or mash 12-14 fresh leaves into a paste with a pestle and mortar)
1 tsp rosemary

Blend all the ingredients into a paste then apply to the roast with a knife or spoon. Norman uses an inexpensive eye of round roast, about 5 inches in diameter and 12 inches long. Leave the roast to marinade for a while - Norman says even half an hour on thawed meat is enough time for the flavour to soak in.

Once the roast is totally coated with marinade, poke the rotisserie rod through the middle.

Heat the BBQ using all three burners to a temperature of 450 - 500 F. Roast the meat for 20 minutes then turn off the middle burner and lower temperature to a steady 400F. Norman says this sears and seals the meat.

Cook for about 50 minutes to 1 hour for rare or medium - use a temperature fork to test. Remove meat from barbecue and wait 20 - 30 minutes before slicing.

The rotation of the meat while cooking keeps the juices in so when you slice on a board BE SURE to save juice for Au Jus sandwich dip!
